 <title>Lemon Chicken ( very easy)</title>

 <description>&lt;p&gt;You need:&lt;br /&gt;
2-3 chicken breasts&lt;br /&gt;
2 pints of oil for frying&lt;br /&gt;
Fritter Batter&lt;br /&gt;
Two tbsp cornflour&lt;br /&gt;
1 tsp salt&lt;br /&gt;
1 pinch pepper&lt;br /&gt;
1 egg&lt;br /&gt;
Sauce&lt;br /&gt;
2 tsp sugar&lt;br /&gt;
4 tbsp dry sherry&lt;br /&gt;
1 tbsp soy sauce&lt;br /&gt;
3 tbsp lemon juice&lt;br /&gt;
½ pint water&lt;br /&gt;
Thickening&lt;br /&gt;
2 tbsp cornflour dissolved in 2 tbsp water&lt;/p&gt;
&lt;p&gt;Cut the breasts in even bite sized pieces. Combine the batter ingredients and beat with fork.&lt;br /&gt;
Add the chicken. Prepare the thickening and set aside. Heat the oil in a deep heavy pan. Until almost smoking. Drop in the pieces of meet and cook until golden brown, about 4 minutes. Drain on absorbent paper. Bring to the boil the sauce ingredients. Add the thickening. Add the chicken and cook for two minutes more. Remove from heat and serve with rice. Enjoy!&lt;/p&gt;
